My family loves it when we have fresh pesto sauce around the house. Every summer I make sure to have at least 3 large plants to use. So if you love fresh pesto I have a secret to keeping it around for you!
This is my deck planter closest to the house. The other plants are in my garden so when I'm feeling lazy I just get it here from the deck. This is not what my basil looks like right now....unfortunately!
This recipe is so easy and you will love having this fresh pesto anytime you want.
After measuring out what I need then all goes in the food processor until well blended.
I have found several different combinations and amounts to use on the web for making pesto but you can use which ever one suites your tastes...but here's the key to having it anytime you want. I get out my mini muffin tins and fill them up then in the freezer they go. After they freeze solid I pop them out and put them in a freezer ziplock for later use. How easy is that? Usually 2 pucks will coat a single dish of pasta.
So when those springtime plants come out go buy 2-3 plants and you will have pesto sauce all summer.
I have flexible trays so it makes for easy out with the pucks.
Here is the basic recipe I use but you can tweak it anyway you like.
2 packed cups of basil leaves
1cup of good olive oil
1cup grated Parmesan cheese
1/2 cup pine nuts
2 cloves garlic
